Applesauce

When a certain family member came to visit a while back, apples were left here no one here eats red apples, so Claire and I made applesauce. YUMMY! It was fabulous and we are thankful for the random fruit left behind.
Ingredients
6 medium apples (I like to use 1/2 sweet, 1/2 tart)
1 cup water
1/2 cup sugar
1 tsp lemon juice
1 cinnamon stick
Directions
Peel and core all of the apples. If you have an apple corer peeler children can help turn the handle. If not a parent will need to do this part using a knife.
Cut the apple into slices and place them in a large saucepan. Add the rest of the ingredients.
Bring the apple mixture to a boil. Once it is boiling cover the pan and turn down the heat on the stove to low. Let the mixture simmer for about 20-30 minutes or until the apples are soft.
Remove the cinnamon stick then mash the apples. For a chunkier applesauce use a potato masher to mash the apples. If you want your applesauce smoother use an electric mixer or food grinder to mash them.
Once mashed place the applesauce in the refrigerator to cool. When it is cool you can put it in the freezer and freeze for up to a year or bottle it using a canner.
Recipe makes about 3 cups of homemade applesauce.

I just made cooked apples today (not sauce) and it was yummy too.
I agree that mixing types of apples for sauce or pies makes a really good result.
